Kaiserschmarrn reinterpreted
Hemp Schmarrn is the special version of Kaiserschmarrn, the traditional dish named after Emperor Franz Josef I. Supposedly, the dessert was served to Empress Sissi in 1854 and is said to have accidentally torn. Today we serve Kaiserschmarrn refined with hemp for extra nutrients, high-quality protein and omega-3 fatty acids. Hemp protein also adds an unusual green colour and extra fibre to the dish.

Ingredients for 4 servings
- 6 eggs
- 400 ml milk or milk substitute e.g. Hemp milk
- 1 level teaspoon salt
- 150 g plain spelt flour
- 50 g Hemp Protein High Fiber
- Pinch of salt
- 50 g sultanas (according to taste)
- 40 g butter and coconut oil
- Icing sugar for sprinkling

Preparation
- First separate the egg whites from the egg yolks and put them in separate bowls. Gradually add the milk, salt, flour and hemp protein to the egg yolks and stir until smooth.
- Add a small pinch of salt to the egg whites and beat until firm. Carefully add the beaten egg whites to the other batter and fold in. Heat a large, non-stick frying pan over medium heat and melt 10 g of the butter in it. Place a quarter of the batter in the pan and bake for 2-3 minutes until golden brown. Then quarter the dough, turn it over and bake for another 2-3 minutes.
- Finally, tear the dough quarters into small pieces and add a quarter of the sultanas. Keep the finished Schmarrn warm in the oven at 50°C and repeat the process with the remaining dough. Sprinkle with the icing sugar and serve.
Tip:
The dish is also suitable as a sweet main meal. As with Kaiserschmarrn, apple sauce or a berry sauce harmonise perfectly with hemp Schmarrn. In the imperial house of Habsburg, the dessert was usually served with a plum roaster.
