The Poké Bowl with hemp rice, crunchy vegetables and mushrooms is a real feast for the eyes and the palate. Poké Bowls have their roots in Hawaii and are particularly delicious and healthy creations. The original consists mainly of rice, crunchy vegetables and raw fish. For a special taste experience with hemp, we have reinterpreted the bowl.
The best thing about it is that this lukewarm dish is also a concentrated load of nutrients.

Overview

You can easily replace the hemp oil mustard dressing in the recipe with your favourite dressing. Millet, buckwheat or quinoa are also ideal substitutes for rice.
Our hemp rice Poké Bowl Recipe is vegan and gluten-free.

Ingredients for 2 servings

  • 150 g basmati or sushi rice
  • 50 g Hulled hemp seeds
  • 150 g mushrooms, e.g. mushrooms, shiitake or chanterelles
  • 1 small onion
  • 1 tablespoon olive oil
  • 300 g vegetables: e.g. tomatoes, cucumbers, peppers, radishes, carrots
  • ½ avocado
  • 4 TBSP. Hemp Oil Mustard Dressing
  • Pinch of salt

Preparation

  1. Roast the hemp seeds in a pot until light brown, then add the rice and cook with twice the amount of water according to the instructions.
  2. Add the olive oil to the pan. Sauté the diced onions with the mushrooms and a pinch of salt. Then remove from the heat and leave to cool.
  3. Cut the vegetables into cubes of max. 1 cm. Cut the avocado into slices.
  4. Hemp Oil Mustard Dressing prepare according to instructions.
  5. To serve, first put hemp rice in the bowl, then fill with chopped vegetables, avocado and mushrooms.
  6. Finally, pour the dressing over, sprinkle with hemp seeds and serve.

Tips

For a Poké Bowl that is as true to the original as possible, you can use fresh, raw fish instead of mushrooms. Grilled vegetables also taste great with the recipe. In short, there are almost no limits to your creativity when it comes to Poké Bowls.
