Hemp protein gnocchi go particularly well with vegetables and are also especially tasty when gratinated with cheese. In this recipe we serve the gnocchi with pumpkin vegetables.

Ingredients for 4 people

  • 350 g spelt semolina fine or spaetzle flour
  • 150 g Organic Hemp Protein Premium
  • 100 ml milk
  • 100 ml water
  • 3 pcs eggs
  • 20 g butter
  • half Hokkaido pumpkin
  • 1 onion
  • 2 carrots
  • 1 tsp salt
  • tsp soup seasoning
  • Parsley

Preparation:

  1. First wash the vegetables, cut the onions into small cubes, the carrots and the pumpkin into approx. 1-2 cm cubes.
  2. Heat a pan with a little oil and sauté the onion briefly. Then add the rest of the vegetables, a teaspoon of soup seasoning and a dash of water. Steam the whole thing for about 20 minutes until soft.
  3. In the meantime, mix the spelt semolina evenly with the hemp protein.
  4. Then add the eggs, salt, milk and water and mix to a semi-smooth dough.
  5. Bring a large pot with water and salt to the boil. Form the dough into a 3-4 cm thick roll, cut approx. 1 cm thick dumplings from it one by one and put them into the water.
  6. After about 5 minutes, skim the dumplings with a perforated sieve, let them drain a little and fry them briefly with butter in a pot. Then serve together with the steamed vegetables and parsley.
